Starting On A Wing And A Prayer
There was supposed to be more breathing room
but a two-week hospital stay seriously cut into
Sandy Handler's finanes. Still Sandy and George
Saunders were commited to the August 11th
Grand Opening of Chicken Delicious, Broadway's
newest restaurant. They had had-it with working
for other people and feeling the chill of long layoffs.
Sandy commited her last dime to the new
business. And she had to use it.
Before the restaurant could open, 79 building
and food costs had to be passed by various inspectors.
Since Sandy and George were doing
most of the work themselves (George poured the
concrete floor, helped with cabinet and plumbing
work and was in on virtually every phase of the
building plan while Sandy designed the entire
operation from the ground up, serving as her own
architect and general contractor) it is incredible
that 77 of the 79 were met on the first attempt.
The range-hood which draws the smoke and
heat from the frying chickens was not up to snuff
and had to be changed before opening day. The
new hood was up to code but left a temporary
small hole in the roof. And you know how it rained
this August.
Beside's picking the name, Chicken Delicious
(it is not a franchise) Sandy also designed the
trademark, a chicken on a moped zooming along,
chef's hat on head. She wrote and placed all of the
advertising in a four-week campaign. If nothing
else, Bethpage was aware there was a new
chicken in town. On August 11th, as advertised,
Chicken Delicious would open its doors at 11:00
am, to a very rainy Saturday. Although they
promised to open at Eleven, the aroma permeating
Broadway was too much for passing Bethpagers.
The store was so mobbed by 10:30 that Chicken
Delicious celebrated its opening one-half-an-hour
early.
"It has been absolutely fantastic," says Sandy,
"We have had an incredible amount of business
since we first opened. In the first week 85 people
used our coupon offer published in the TRIBUNE
and Pennysaver. And we haven't slacked off. I
had hoped we would reach this level by the end of
our first year. We certainly didn't expect this
response. It's a rewarding and gratifying
feeling."
